Original and easy to make tartlets. The combination of goat, beetroot, feta will surprise with its sweet and contrasting taste.

Pepper & caramel melon with goats cheese
Ingredients
- ½ watermelon
- 300g fresh goat cheese
- 100g crème fraîche
- Brown sugar (as needed)
- Apple juice (as needed)
- Peugeot pepper Red meat mix
- Mint
Preparation
- Scoop out watermelon balls with a special spoon (melon baller), or form into cubes.
- Put the brown sugar in a shallow pan and caramelise.
- Add the coarsely ground Peugeot pepper to the pan and glaze with the apple juice. Do not stir the mixture, but let it simmer until the sugar is dissolved.
- And the watermelon balls and lightly simmer.
- Mix the goat cheese and the crème fraiche into a cream and season with salt, pepper and mint.
- Pour the cheese and cream mixture into a piping bag fitted with a fluted tip.
For serving:
- Arrange the watermelon balls (2 rows of 4) on a plate and place a row of cream cheese balls between each.
